Homemade Pasta

Who doesn’t love fresh pasta? Pasta is soooo easy to make and yet nobody does it. It takes a little bit of time and the taste is totally worth it. There is really no trick to making good dough. You have your eggs, flour and extra virgin olive oil. That’s it! This is a great way to get the family involved in dinner making. ~or~ If you really want to impress your guests break out your pasta machine and show them how amazing of a cook you are!

PASTA DOUGH INGREDIENTS:
4 Cups of all purpose flour
4 to 5 extra large eggs
1 to 2 teaspoons of Olive Oil

INSTRUCTIONS:
1. Mound 4 cups of the flour in the center of your counter or you can use a large bowl. Make it look like a volcano. Then make a well/crater in the middle of the flour and add the eggs (start with 4 and add the 5th if necessary) and olive oil. I always break my eggs in another bowl just in case I get a loose shell. Then I transfer to well. Using a fork, beat together the eggs and oil and begin to incorporate the flour, starting with the inner rim of the well. As you expand the well, keep pushing the flour up from the base of the mound to retain the well shape.

2. The dough will come together when half of the flour is used. At this point, start kneading the dough with both hands, using the palms of your hands.

3. Once there is a cohesive mass, remove the dough from the bowl and scrape up and discard any leftover bits. Lightly re-flour the area and continue kneading for 6 more minutes. The dough should be elastic and a little sticky.

4. Wrap the dough in plastic and allow to rest for 30 minutes at room temperature.

5. Roll or shape as desired. We have a Marcato 8320 Atlas Pasta Machine. These make spaghetti, fettuccine or flat sheets of pasta. You can also get attachments for it as well. {amazon link}

My assistant Haven helping me crank the Marcato 8320 Atlas Pasta Machine. Then you see our choices of drying. Since these pictures we have a pasta drying rack. But, this is how we did it to start. If you choose to lay it on a counter make sure to dust the counter with flour.
